Fresh and seasonal ingredients will be the most popular summer ingredients in Italian camping restaurants: watermelon prevails (35%), followed by scampi and clams (32%), apricots (24%) and nectarines (20%) . Among the dishes that will mark the summer of 2022 are the revisited sushi (35%), the croquette (15%) and the salty cannolo (28%). Indicating the food and wine trend in the coming months is a survey by the online restaurant booking platform TheFork.
For the type of summer food preferred by the customers of the campsites with a restaurant, it is not surprising the victory of fish (42%), followed by Mediterranean (14%) and regional Italian cuisine (13%). The most ordered dishes at the restaurant during the season will be mainly seafood: fried, raw and mixed grills, but also seafood salads and first courses such as spaghetti with clams, linguine with sea urchins or risotto with shellfish. Evergreen is always pizza.
Among the most creative recipes stands out the shrimp wrapped in fried tagliolino with avocado sauce, carnaroli rice, matcha and Capo Vaticano shrimp, or even the turmeric and lemon scialatiello with stracciatella, pistachio grains and purple prawns marinated with orange and saffron.
As for spending, 65% say their restaurant budget has remained stable compared to the pre-Covid period. In particular, the average cost per person for the restaurant for lunch will be around 20 euros, while for dinner it will be 30 euros. The main requirement for choosing a restaurant remains the quality of the food (51%), but the availability of outdoor seating (18%) and the price (17%) also matter.
